I’m doing fine, made myself some arais which is like meat stuffed pita in the oven, very good , it’s a traditional food for my area of the world, the name direct translation is “fiancé “ or “bride” because I believe it used to be an engagement party food, my family recipe:
10 pita
1 kilo of minced meat
1 onion
1 cup of parsley
2.5 tablespoons of salt
1 tablespoon of cumin
2 tablespoons of spicy paprika
Paper to taste What to do: you mix everything from the meat until the the paprika together, cut your pita to half, stuff the pita with meat, chard pita, we usually just use pan, cut the half to quarter finish the cooking in a pre warmed oven for 180 degree Celsius for 10 minutes. Eat with tahini. Very good.
