In the Philippines, Kaldereta or Caldereta is a spanish derived dish that is made out of mutton, liver spread (similar to pate), cheese, capsicum, and chillies in a tomato based sauce.
Another dish in the right is
La paz batchoy/batchoy, it is an Ilonggo noodle dish simmered in rich beef broth, beef meat and innards. What makes this dish delicious is how flavor every spoon of its soup.
These are my favorite selected Filipino dishes that are being served when there are occasions.
